Sweet Liberty

 

From the time he was a child, Eric always knew he wanted to be a chef.  He got into chocolate making 7 years ago and has been working on perfecting his art.  He sees chocolate as “a gift from God—one of the finer things in life; it is something that nourishes the soul as well as the body.”  For him, the art of chocolate making is one of the greatest gifts he can giveback to the world.  His high standards for purity of ingredients are reflected in the quality of chocolate he produces.  This particular endeavor is a labor of love, allowing Eric to demonstrate his enthusiastic support for the principles Dr. Paul espouses while he pursues his passion of making the world a more beautiful place one bite of chocolate at a time.

 

About the Artist

 

As a chocolatier, Eric has completed several chocolate sculptures and artistic creations including the body of a woman—“Nicolette”, a chocolate goblet, covered in 24 carat edible gold and candied jewels, solid chocolate detailed Easter bunnies and gilded strawberries.  He has also created a line of “Chossils”—chocolates modeled after fossils.  One of his favorite endeavors was the model of the Maltese Falcon (from the Humphrey Bogart movie) that he made for a children’s fundraiser.  Other projects include a Stetson hat for a pet fundraiser and chocolate shoes to help raise awareness and funds for breast cancer research and treatments.
